Just in time for BBQ season delicious mini burgers.

Succulent, moist, delicious, sweet, chocolatey… wait you didn’t think I was referring to meat burgers did you?

I was talking about cupcake burgers. They are so cute. Look just like sliders.

They are easy to assemble. (I would love to post photos of me assembling them but my place has really crappy lighting so until I move out my hole of a basement apartment these after shots will have to do!)

Anyways back to the burgers.

Cut vanilla cupcake in half. (If the top half is larger than the bottom half just use  circle cookie cutter to trim it to a similar size as the bottom half)

Bake brownies in a cookie sheet rather than a square pan to make them thinner. Then using circle cookie cutter of a similar width to the cupcake cut the patties out.

Tint buttercream icing in red (ketchup), green (lettuce) and yellow (mustard).

Now the rest is fairly straight forward.

Place some icing on the bottom half of cupcake and place a patty on top.

Then alternate between the colored icings to create the illusion of ketchup, mustard and lettuce.

Place top half of cupcake on top. Then sprinkle the top with sesame seeds.

And voila burger cupcakes!


One Sweet Product!

I just recently purchased the Tovolo Cupcake Pen from iQliving on Danforth in Toronto ON.

And let me just say…worth every penny.

It is the most wonderful product I’ve used to distribute cake batter into cupcake pans. It’s easy to fill and then to fill each cupcake wrapper is so easy and mess free. Just squeeze it out and once you’re done squeezing it stops flowing. No mess. No more struggling with dripping batter all over the place. I love it. It’s also great for making pancakes.

I definitely recommend it.

Chocolatey Cupcakes

Delicious moist chocolate cupcakes with a fresh strawberry buttercream frosting… MMMMMMMmmmmm…. drool.

The cupcake itself turned out so moist and chocolately.

My secret (and well the secret of many bakers) when a chocolate cake recipe calls for water I substitute it with freshly brewed black coffee. You just substitute the water with coffee in the exact same amount. So 1 cup water,  add 1 cup coffee instead.  You would think it would make a mocha chocolate type flavour but it doesn’t. It just enhances the chocolate flavour and makes your cake even more delicious. If you want a mocha type flavour, brew espresso instead as it is much stronger. Or just add instant espresso powder to your cake mix.

Sorry everyone got busy with renovations to my apartment in September, Canada’s Walk of Fame in October and looking for a new job November/December, so I’ve been slacking on the posts.

Cheesy Chocolate Cupcakes…mmm

So one of my favourite recipes to make when I am craving chocolate and cheesecake are these cheesy chocolate cupcakes from the Company’s Coming Most Loved Treats recipe book:

Delicious Cheesy Chocolate Cupcakes



8 oz = Block of light cream cheese, softened
1/2 cup = Granulated sugar
1 = Large egg
1 cup = Semi-sweet chocolate chip

1 1/2 cup = All purpose flour
1 cup = Granulated sugar
1/3 cup = Cocoa, sifted
1 tsp = Baking soda
1/2 tsp = Salt

6 tbsp = Butter, softened
1 cup = Warm water
1 tsp = Vanilla


Beat cream cheese, first amount of sugar and egg in small bowl until smooth. Add chips. Stir. Set aside.

Combine next 5 ingredients in large bowl. Make a well in centre.

Add butter, warm water and vanilla to well. Beat for about 2 min until smooth. Line 20 ungreased muffin cups with large paper liners. Divide and spoon batter into each cup. Divide and spoon cream cheese mixture over the chocolate batter in each cup.

Bake 350 degrees F (175 degrees C) oven for 30 to 35 min until toothpick inserted in centre of cupcake comes out clean.

Makes 20 cupcakes.
